However, using slow-cooker you can make many exotic Indian dishes very simple. <div><br /></div><div>Here is one example of such adaptation. Rice Pudding or Kheer is available in most Indian Restaurants during buffet in US. <br />
<b>Ingredient</b><br />
1. 1 liter (34 Oz) whole milk</div><div>2. 1/2 liter(16Oz) half and half milk<br />3. 1/2 cup rice<br />4. 2/3 cup sugar<br />5. 1/4tsp cardamom powder<br />6. Almond and pistachio for garnishing<br />
<br />
<b>Method</b><br />
1.Wash rice and soak in a 1/2 cup water for one hour<br />
2.In a heavy saucepan, boil milk on medium-high heat on stove-top. (If you have a slow-cooker bowl that will go on stove-top as well as in slow-cooker then you can use same bowl. If you do not want to boil the milk on stove-top, directly put it in slow-cooker. This will just increase the cooking time by another hour or so.)<br />
3.Set slow cooker on high.<br />
4. Transfer milk and sugar in slow cooker bowl.<br />
5. Drain water in the rice and break the rice little bit and transfer it to slow-cooker. (This will reduce the cooking time.)<br />
6. Do not cover slow cooker<br />
7. Every one hour stir the milk to make sure layer of cream is breaking and mixing well with kheer.<br />
8. After 6-7 hours kheer will be ready.<br />
9. Transfer Pudding/Kheer in a serving bowl, add cardamom powder and mix it well. Garnish with almond and pistachio.<br />
10.Put it in refrigerator to let it cool. Enjoy.<br />

Just like the title suggests, recipes are so simple and very simply written,<br />

None of the recipes are more than 4-5 steps. They are written in big prints that even 5 year old child will be able to make these recipes with some oversight of the adult.<br />

You can make simple khichdi by just adding tempering of cumin seeds and salt/turmeric to rice/dal mixture.<br />

Today's recipe is an elaborate version sometimes also known as badshahi khichdi (royal khichdi). You can make khichdi on stove top or in pressure cooker or rice cooker. For this recipe I have used slow cooker.<br />

1. 1 cup rice<br />
2. 1/2 cup pigeon peas dal<br />
3. 1 cup cube cut eggplant<br />
4. 1/2 cup cube cut potato<br />
5. 1/4 cup fresh green pigeon peas ( optional )<br />
6. 1/3 cube cut onion<br />
7. 2 clove nicely cut garlic<br />
8. 1/2tsp green chili ginger paste<br />
9. 1/2tsp red chili powder <br />
10. 1/4tsp turmeric powder<br />
11. 12 black pepper corn <br />
13. hand full peanuts<br />
14. salt to taste<br />
15. 2-1/2 cup hot water<br />

<strong>Tempering:</strong><br />

1. 1tbsp oil <br />
2. 2 tbsp <a href="http://www.indoglobalfood.com/2014/04/how.to.make.ghee.from.butter.html" target="_blank">ghee </a>(replace this with oil if you prefer vegan)<br />
3. 1 tsp mustard seeds<br />
4. 1 tsp cumin seeds <br />
5. 5 clove, 5 small cinnamon, 2 whole red chili<br />

<strong>Method to make Khichdi in Slow Cooker:</strong></h3>
1.Soak dal in a boiling water for 4 hours.<br />
2. Soak rice in water for 2 hours.<br />
3. Once dal and rice are soaked, combined all ingredients in a slow cooker.<br />
4. Now prepare tempering:<br />
- Combine oil/ghee, mustard seeds. cumin seeds and whole red chili in a sauce pan.<br />
- Put it on medium heat on stove top.<br />
- After mustard seeds cracks, add clove and cinnamon. Turn off stove top.<br />
5. Add tempering in the slow cooker.<br />
6. Add 2-1/2 cup hot water in slow cooker and mix it well.<br />
7. Cover slow cooker and set on high.<br />
8. After 2-1/2 hour vegetable khichdi will be done.<br />
<br />
Enjoy hot khichdi with <a href="http://www.indoglobalfood.com/2013/09/indian-carry-in-slow-cooker-crock-pot.html" target="_blank">vegetable curry</a>, <a href="http://www.indoglobalfood.com/2014/07/slow.cooker.kadhi.tempered.buttermilk.recipe.html" target="_blank">kadhi</a> (tempered buttermilk), or yogurt.<br />

Making Shrikhand requires slightly sour yogurt. If you don't have sour yogurt available and cannot wait for yogurt to turn sour, then this is the recipe for you. Shrikhand using sour cream is just as delicious that is made using yogurt.<br />

Method Step By Step:<br />
1.In a big bowl combine sour cream , hung yogurt and sugar. Mix it well.<br />
2.Put plastic strainer on another bowl, transfer yogurt and sugar mixture from Step 1. Sift with steel spoon.<br />
3.Now add cardamom powder, almond and pistachio.<br />
4. Shrikhand is ready once it becomes smooth.<br />
5. Put it in a refrigerator for one hour to chill.<br />
<br />
Serve cold with Puri or Roti.<br />

1. 3/4 cup rolled oats<br />
2. 2tbs all purpose flour<br />
3. 2tsp wheat flour<br />
4. 1tsp rice flour ( optional)<br />
5. 1/3 cup brown and 1tbs white sugar ( you can use white sugar if brown sugar is not available)<br />
6. 1/2tsp baking powder<br />
7. 1/4 cup butter (keep it at room temperature)<br />
8. 1/4 cup raisin<br />
9. pinch of salt<br />
10. Few drops of vanilla essence<br />
11. 2tbs chopped walnut and cashew<br />
12.1tbs milk ( as needed )<br />

1. In a bowl mix flour, baking powder, salt,raisin and nuts. Mix it very well and keep it aside.<br />
2. Now combine butter and sugar and beat it until it becomes fluffy.<br />
3.Add vanilla, flour and 1tsp milk and mix it well to make soft dough.<br />

4.Divide dough in 16 equal parts.<br />

<b>1. Essential Oil:</b><br />

This is the simplest and least intrusive natural remedy. Three oils that we have felt most effective are equal part mix of Lavender, Lemon and Peppermint. When weather is cold or kids seem congested due to allergy or normal cough, just need to apply 2-3 drops of this mix oil on their feet or back and it gives them almost immediate relief. Since skin of both our kids is very sensitive, we do not apply on any other parts of the body. We have been using these oils for more than year and half now and they are always in our medicine cabinet now.<br />
<br />
Few other ways to use these oils are:<br />

<li>Apply on their cloths or on pillow</li>
<li>Add few drops in shower</li>
<li>Add few drops in hot water and let them breath the steam (be very careful around hot water)</li>

This is another natural remedy which helps clean-up all the gunk that builds up in nose , throat and sinus cavities. NeilMed Sinus Rinse kit was referred to one of our relative by their pediatrician more than 2 years back and we have been using it for almost a year now. This is kit is based on age old Indian Medical Technique called "Neti". This technique is still in used to clean up sinus cavities. NeilMed Sinus Rinse does the same thing but it is so much simpler to use. In this process Seline Water goes in from one nostril and comes out of another and with it brings out all the gunk which gives such a relief to tiny noses. 1. 1 cup ricotta cheese ( Mawa )<br />
2. 1/3cup + 1tbsp sugar<br />
3. 2 tsp ghee ( butter )<br />
4. 1-1/2 tsp un-sweetened cocoa powder<br />
5. 2 pinch cardamom powder<br />

<b>Method Step By Step:</b><br />
<br />
1.In a microwave safe bowl combine ricotta cheese ( mawa ), sugar and ghee ( butter ). Mix it well.<br />
2. Cover it and put it in microwave for 5 minutes.<br />
3. Give it good stir after 5 minutes.<br />
4. Again put in microwave and keep steering about every 3 minutes.<br />
5. After about 12 minutes you should see that mawa mixture is coming together and does not stick to the bowl. That is when burfi should be done. Mix it well and split in 2 equal parts.<br />
6. Add cardamom powder in one part. Mix well and spread in a greased plate.<br />
7. Add cocoa powder in second part, mix it well and spread it on top of white part.<br />
8. Let it cool down for about 4 hour and then cut it in pieces.<br />

Best part is that none of these recipes require any cooking, other than little bit of melting of chocolate or butter etc in microwave. These recipes indeed make for great project for summer or any rainy day also !<br />

<b>1. Two Ingredient Watermelon Popsicle: </b>This was the first project my daughter did with the kids and they had so much fun. It is very forgiving recipe. You can test as you go and adjust the sweetener as needed. All you do it chop the watermelon, add sweetener and make puree in blender. Enlist kid's help to pour this puree in Popsicle mold and wait for it to freeze well.<br />

<b>2. Vegan Pineapple Whip or Slurpee or Popsicle: </b>This is another very forgiving recipe. Just mix frozen banana, frozen pineapple and coconut milk in blender and give it a good churn. Eat it right away, or freeze it little bit. Or you can also make Popsicle out of it. If pineapple is fresh or without sweet syrup, you may need to add little bit sweetener but depending on quantity of banana, you may not need much sweetener. <b>3. Homemade KitKat: </b>This was another project kids enjoyed a lot. All you need is chocolate bark or chocolate chips and wafer biscuits. Just melt the chocolate in microwave and let kids spread it on top of wafer biscuit with spoon. Got to be little careful to make sure they don't burn themselves with hot chocolate. There were hardly any homemade KitKat left for my daughter to take any pictures !!<br />

<b>4. No Bake Cereal Bar: </b> This project is next on our list to try out. Again very simple project. All you do is mix oats, peanuts and Rice Krispies. Melt Peanut butter and sweeter in microwave and mix it bit oats/peanuts/cereal mix. Spread it well and let it freeze for 30 minutes before enjoying. All you do is enlist help of kids to crush vanilla wafers. Mix them with butter and press the mixture at the bottom of the tray. Mix rest of the ingredients and fold them in the base. did really good job of keeping strawberries in good shape for more than 2 weeks. They are great value for money and great product to have to reduce the wastage of berries. So even though my Berry Boxes are great help, I needed to make some room in my freeze. So I ended up making some mix-fruit Jam with those freshly picked strawberries.<br />

Just like my <a href="http://www.indoglobalfood.com/2014/05/slow-cooker-mango-jam-recipe-how-to.html" target="_blank">Mango Jam</a>, I made this mix-fruit jam using slow cooker as well so no worries about stirring to make sure Jam is not sticking and not splatters of Jam all over the kitchen !<br />

It was very simple to make Jam in crockpot. All I did was crushed the fruits and mixed them with sugar. Rest work was done by my slow-cooker !<br />

3. 1/2 cup strawberry puree<br />

1. Combine fruits and sugar in a slow cooker bowl and mix them well.<br />

2. Set slow cooker on high. Make sure to not cover the slow cooker.<br />
3. After about 4 hours mix the fruit puree well and churn it with hand-mixer.<br />
4. Cook for another 20-30 minutes or so until desired consistency is reached.<br />
5. Now transfer jam in a bowl and add lemon juice. Again mix it well.<br />

Cook Time: 1.5 Hours on High Setting<br />

1. 6 Oz. Semi-Sweet Chocolate Chips<br />
2. 1 Cup Broken Cashew Nuts<br />
3. 1/2 Can Condense Milk<br />

<b>Method:</b><br />

1. Layer cashew at the bottom of slow cooker.<br />
2. Top it with Condense milk and then Semi-Sweet Chocolate Chip.<br />
3. Cover slow cooker with a paper towel and then cover the lead. (Paper towel is used to make sure water does not drip in the cashew cluster)<br />
4. Check every 30 minutes to make sure chocolates are melting fine.<br />
5. After about hour and 30 minutes, chocolates should be well melted.<br />
6. Now scoop one table spoon mixture at a time and place it on wax paper.<br />

Today I am posting this simple curry that goes very well with khichadi. In our gujarati household it is called tameta, bataka, vatana nu shak (tomato, potato and peas curry).<br />
<br />
All you need is some chopped potatoes, tomatoes and peas. All these are usually found in our refrigerator. Just need little bit of tempering and put it in slow cooker. This curry or shaak goes well with roti or paratha as well.<br />

List of spices mentioned below seems little elaborate but they are all easily available in any Indian Grocery store. <strong>Ingredients for tameta, bataka, vatana nu shaak:</strong><br />

1. 3 cup cube cut potato ( I use <a href="http://www.amazon.com/gp/product/B000I6JZWA/ref=as_li_tl?ie=UTF8&camp=1789&creative=9325&creativeASIN=B000I6JZWA&linkCode=as2&tag=vegeindislowc-20&linkId=IUDD3F4ITQBRFR2G" rel="nofollow" target="_blank">Vidalia Chop Wizard</a><img alt="" border="0" src="http://ir-na.amazon-adsystem.com/e/ir?t=vegeindislowc-20&l=as2&o=1&a=B000I6JZWA" height="1" style="border: none !important; margin: 0px !important;" width="1" /> to make cutting/chopping easy.)<br />
2. 1 cup cube cut tomato <br />
3. 3/4 cup frozen green peas <br />
4. 1/2tsp red chili powder <br />
5. 1/4tsp turmeric powder <br />
6. 1/2tsp coriander powder <br />
7. 2/1/2tsp brown sugar ( jeggari )<br />
8. salt to taste <br />
9. 2tbsp nicely chopped coriander leaves<br />
10. 1-1/2 cup hot water<br />
<br />
<strong>Tempering:</strong><br />
1. 2tbsp oil<br />
2. 1/2tsp mustard seeds <br />
3. 1/2tsp cumin seeds<br />
4. pinch of asafetida <br />
<br />
<strong>Method To Make Tameta, Bataka, Vatana Nu Shaak: </strong><br />
<strong><br /></strong>
1. Combine potato, spices and water in a slow cooker.<br />
2. In a small sauce pan combine oil, mustard seeds and cumin seeds.<br />
3. Put it on medium heat on stove top.<br />
4. When seeds pop, add asafetida. Turn off stove and combine tempering in a slow cooker.<br />
5. Cover slow cooker and cook for about 2 hours.<br />
6. Once potatos seem cooked, add green peas and tomato and mix it well.<br />
7. Take out about 2tbsp of potato mixture out of slow cooker and mesh very well. Mix this back to the curry in slow cooker. This will help thicken the gravy.<br />
8. Transfer curry in a serving bowl and sprinkle with coriander leaves.<br />
<br />
Curry or Shaak is ready to serve. Enjoy with roti, paratha, rice or khichdi<br />

with a paper towel and then close the lead. This will make sure mist does not

4. After 4 hour, prepare tadka/tempering in a small frying pan. Put small pan on medium heat. Add oil, mustard seed and cumin seeds. Once they crack, add asafoetida and immediately pour in slow cooker.<br />
5. Now add Jaggari/brown sugar. Dissolve it well and sprinkle with coriander powder and mix it well.<br />
6.Transfer in a serving bowl and sprinkle with cilantro.<br />
7. Opo Squash and Daal is ready to be served with rice, chapati, paratha etc. <br />

<b>Cook Time:</b> 20 Minute (Soak time for daal is about 3 hours)<br />

<b>Ingredients</b>:<br />
1. 1/2 cup split moog dal ( soak in a water for 3 hours )<br />
2. 2 tbs chopped spinach <br />
3. 1/3 cup chopped carrot <br />
3. 1/2 tsp green chili ginger paste<br />
4. 2 tsp rice flour<br />
5. 2 tsp soji flour (optional for gluten free recipe)<br />
6. oil as needed <br />
7. salt to test<br />
8. 3 to 4 tbs water <br />

<b>Method Step By Step:</b><br />
1. Once daal is soaked properly, split it in two equal parts.<br />
2. Add spinach in one part and carrot in another part.<br />
3. Grind each part in grinder. Add little water as needed to make smooth batter.<br />
4. Now add 1tsp rice flour and 1tsp soji flour in each (green and orange batter).<br />
5. Add chili ginger paste and salt. Mix it very well.<br />
6. As you can see in picture below, at this point you should have really bright colored batter ready.<br />

7. Turn on stove top on medium heat and put griddle on top of it.<br />
8. Spread some oil on griddle and spread some batter on griddle. Flip it on other side when bottom looks slightly brown and cooked.<br />
9. You can keep thickness or size as per your preference. My daughter usually makes mini pancakes for her kids that are usually little thick. While for herself she makes bigger and thinner.<br />
<br />
Serve pancake with yogurt or chutney.<br />
<br />
My daughter sometimes adds beet in the batter and it gives pancake really nice pink/purple color. You can use any vegetable of your choice.<br />

<b>Ingredient</b><br />

1. 2 1/2 cup spinach<br />
2. 1/2 cup onion<br />
3. 1/3 cup paneer<br />
4. 1/2 tsp red chili powder <br />
5. 1/4 tsp garam masala ( all spice )<br />
6. salt to taste<br />
7. 2 tsp oil<br />
8. 6 tortilla ( roti ) store bought or home made<br />
9. 6 tsp shredded cheese <br />

<b>Method to make filling:</b><br />

1. In a frying pan combine oil and onion with pinch of salt.<br />
2. Put it on gas stove on medium high heat. Stir it for few minutes until onion turns pink. Now add spinach and little bit of salt.<br />
3.After few minutes add red chili powder and garam masala powder ( all spice powder)<br />
4. Cook until water is absorbed. Now take this spinach/onion mixture off of the gas and let it cool down little bit. Add crumbled paneer and mix it well.<br />
